Spice Rubbed Roasted Salmon

Salmon is one of my favorite fish meals not only because of the taste but also because of the high Omega-3 content. It is also a very good source of Protein, Niacin and Vitamin B-12. I would also suggest that you purchase wild salmon over farm raised. The reason being that farm raised salmon has been known to have larger amounts of PCB's and other contaminants, which are ingested through the feed and then stored in the fat of the fish.  

I usually have salmon once a week and more often in the spring and summer months because I prefer to grill it. This particular dish is was one of the first salmon dishes that I prepared with a spice rub that truly complimented the salmon flavor. Grilled or roasted asparagus pairs extremely well with the salmon. Let me know what you think.



1/2 Teaspoon Salt
1/2 Teaspoon Ground Cumin
1/2 Teasppon Ground Coriander
1/4 Teaspoon Paprika
1/4 Teaspoon Ground Cinnamon
1/8 Teaspoon Freshly Ground Black Pepper
1 (2 1/4 pound) skinless Salmon Filet (I prefer to leave the skin on the salmon when grilling)
Cooking Spray
2 cups thinly sliced onion

Preheat the oven to 400 degrees

To prepare the salmon, combine the 6 spices into a small bowl and stir. Once the spices are mixed, spread them evenly over the fish. Place the onion in a medium roasting pan coated with cooking spray. Place the fish on top of the onion: bake at 400 degrees for 20 min. or until the fish flakes easily when tested with a fork or desired degree of doneness.

* The rub will add to the sodium content of the salmon.
